Easy Microwave Risotto

Grandma Marie loved risotto — especially when she discovered she could make it in the microwave and didn’t have to stand over the pot and stir it.
 
 

Ingredients

2 Tbsp. butter

2 Tbsp. olive oil

1/2 cup finely chopped onion

1 cup arborio rice

3 cups chicken stock

1 tsp. salt (optional)

 

Directions

Cook in a microwave at full power. Uncovered.

Heat the butter and oil in an 11-by-8-by-2 inch dish for 2 minutes.

Stir in the onion, coating with butter and oil, and cook for another 4 minutes.

Stir in the rice, coating it well.

Stir in the stock. Cook the mixture for 9 minutes.

Stir and cook for another 9 minutes or until all the liquid is absorbed.

Let the risotto rest several minutes before serving.

Serves 6
