Scampi
“This is a broiler version of scampi from Grandma Marie. Don’t overcook the shrimp. You can also make this on the stovetop or the grill, though you’ll risk flareups on the barbecue and won’t have that buttery sauce left in the bottom of the pan.”
Ingredients
1½ cup chopped onion
½ cup butter
3 lbs. shrimp, fresh or frozen/defrosted, shelled and deveined
½ cup olive oil
½ cup chopped parsley
3 to 5 garlic cloves, crushed
2 tbsp. lemon juice
1½ tsp salt
¾ tsp pepper
Directions
Saute onion in butter until tender. Put in large bowl, add all else and toss.
Arrange shrimp in large baking pan. Pour on remaining sauce.
Broil 3 to 5 minutes -- 6 inches from heat. Turn and broil 3 to 5 minutes longer.
