Zucchini Torta
“This is from Grandma Marie’s recipe box. There is another in Great-Grandma Rose’s file that’s attributed to Louise; the only difference is the oven temp — 325 degrees.”
Ingredients
2 cups grated zucchini
½ cup grated cheese
½ cup Bisquick
¼ cup olive oil
1 egg
1 clove minced garlic
Chopped parsley
Salt and pepper to taste
Directions
Mix all together. Place in oiled pan coated with bread crumbs.
Bake at 350 degrees for 35 minutes.
