Monterey Jack Rice

Ingredients

2 ½ cups water

1 cup rice

2 cups sour cream

½ pound Monterey Jack cheese, grated

7 oz diced green chiles

3 Tbsp butter

¼ cup freshly grated Parmesan cheese

 

 

 

Directions

 

Bring water to boil and add rice. Cover pan, simmer over low heat until the liquid is absorded, approximately 25-30 minutes.

Let rice cool.

Preheat oven to 350 degrees.

Mix cooked rice with sour cream.

In the bottom of a greased ½ qt casserole pan, spread half the rice mixture. Sprinkle the grated Jack cheese and chiles on top. Add the rest of the rice. Dot with bits of butter and spinkle with Parmesan cheese.

Bake uncovered in preheated oven for 30 minutes until golden grown on top.
