Hot Peanut Dressing

with Bean Thread, Cukes and Chicken

This is a favorite of Papa Mark’s from a Hunan cookbook that is long gone. The sauce works for Hunan Chicken Salad or any noodle dish.
 
 

Ingredients

2 Tbsp crunchy peanut butter

2 Tbsp soy sauce

4 Tbsp vinegar

1 Tbsp hot red chili paste or oil

1 tsp hot red pepper powder

½ tsp black pepper

1 tsp sugar

1 Tbsp sesame oil

2 Tbsp vegetable oil

1 Tbsp crushed garlic

1 Tbsp minced scallions

1 Tbsp white wine

1 tsp dry mustard

½ tsp salt

¼ cup chicken broth, white wine or water

Bean thread

Grated cucumbers

Slivered chicken

Directions

Mix all together.

To serve, pour over bean thread with grated cucumbers and slivered chicken.

Chill well.
