Grandma Marie's Wax Peppers

Grandma and Lynn would do this together. Now, Lynn carries on the traditional with her kids.
 
 

Ingredients

6 cases (12 per case) quart jars

1 1/2 jars (16 oz. each) peeled garlic

50 pounds of Italian wax peppers

1 box plain salt

9 1/2 gallons cider vinegar

 

 

Directions

Get the peppers from Bruno’s in Lodi, Calif. Ask for the mild peppers. They come rinsed.

Pack in jars with tip side down.

Garlic can be used first or at the end.

Salt goes on top; 1 Tbsp per quart jar. (If you are using pint jars, it’s 1 1/2 tsp. per pint.) Pour vinegar on top, put not all the way to the top.

Screw the lids on tightly.

Riddle (turn upside down and right side up) for 2 weeks.
