Lynn's Black Bean and Corn Salad

Ingredients

2 cans (15 oz each) black beans, drained and rinsed

1 pkg (10 oz) frozen yellow or white corn, defrosted

1 large red bell pepper, seeded and finely chopped

2 small fresh jalapeno chile peppers, seeded and finely chopped (Lynn often substitutes ½ cup finely chopped onion instead)

¼ cup firmly packed chopped cilantro

¼ cup fresh lime juice

Salt and pepper to taste

Directions

Mix ingredients one hour to one day ahead.
