Viv's Ginger Cookies
Ingredients
½ cup crystallized ginger
¾ cup sugar
6 Tbsp butter
¼ cup molasses
1 large egg
2 cups all-purpose flour
2 tsp baking soda
¾ tsp ground cinnamon
½ tsp ground nutmeg
Directions
In a food processor or blender whirl ginger and 1/3 cup sugar until finely ground. Remove to a bowl.
Put butter and 1/3 cup sugar in food processor and whirl til fluffy.
Add ginger mixture, molasses and egg and whirl to mix.
Mix flour, soda, cinnamon and nutmeg. Add to butter mixture whirl to blend.
Cover dough and chill in fridge for at least an hour.
Shape dough into 1-inch balls and roll each on a plate of sugar to coat.
Place 2 inches apart on greased baking sheet
Bake at 350 for 12 minutes switching positions half way through.
Cool on wire rack.
