Garlicky Grilled Marinated Shrimp
“Grandma Marie shared this shrimp recipe to go along with the microwave risotto. Umm, garlic. ”
Ingredients
36 large or extra large shrimp (at least six per person), peeled and deveined
1 small onion, finely chopped
2 Tbsp (about 1 oz.) fresh ginger root, peeled and finely chopped
4 large cloves garlic, finely chopped
2 large green onions, chopped (both white and some greens)
1/2 cup lemon juice (2-3 large lemons)
1/4 cup soy sauce
2 Tbsp honey
Directions
Rinse shrimp and colander and set aside.
Mix all the other ingredients in a bowl. Toss the shrimp in this bowl until thoroughly coated. Let them sit for about 30 minutes. (You can do all this mixing, coating and sitting in a Ziploc bag.)
Thread the shrimp onto metal skewers. (You can skip this. Just be careful turning the shrimp on the grill.)
Grill until they are pink and cooked through. About 3 minutes per side. Grilling time depends on size of shrimp, intensity of heat and distance from coals or flame.
Watch the shrimp carefully. You can tell when it's time to turn the shrimp when they start to turn slight opaque on the side near the flame.
They'll turn pink when they are done. Don't overcook or they'll get tough.
Remove the shrimp from the skewers and serve with risotto and grilled peppers.
