Warm Potato with Watercress

Ingredients

1 ½ lbs small red potatoes

3 Tbsp olive oil

1 tsp salt

½ tsp pepper

2 tsp fresh lemon juice

1 tsp sherry vinegar

Bunch of watercress – washed, stems removed

Zest of lemon

 

 

 

 

 

Directions

Heat oven to 375. Arrange potatoes in roasting pan, add 1 tablespoon olive oil, salt and pepper and roll potatoes to coat. Roast about 40 mins. Remove and let cool.

Whisk together lemon juice, vinegar, 2 tablespoons olive oil, salt and pepper.

Break each potato in half and put in a serving bowl. Add vinaigrette and toss. Add watercress and lemon zest, toss and serve.
