Spinach Custard

This recipe is from Jeffrey’s Restaurant in Austin, Texas.
 
 

Ingredients

Spinach

Onion

Garlic

 

Custard base

6 egg yolks

2 whole eggs

1 qt cream

Salt

Directions

Saute lots of spinach with onion and garlic. Puree.

Prepare custard base, mix together and season with salt.

Strain together with spinach mixture.


Bake in bain marie.
