Viv's Caesar Salad
“Viv says she hasn’t made this recipe in years. The raw egg freaks some people out, and you can omit it. And you can omit all the garnishes. ”
Ingredients
Large head of lettuce – washed and torn to bits
2 cloves garlic – minced
4 anchovy fillets – chopped (optional)
1 tsp dry mustard
½ tsp salt
Freshly ground black pepper
Few drops Tabasco
Few drops Worcestershire Sauce
¼ cup grated Parmesan
2 Tbsp wine vinegar
¾ cup extra virgin olive oil
1 egg
Juice of ½ lemon
Garnish—croutons, tomatoes, bacon, hard-boiled eggs
Directions
In a large salad bowl combine garlic, anchovies, salt, pepper, cheese, Tabasco, Worcester and vinegar
Whisk in oil
Add lettuce and toss
Break raw egg on top of greens and sprinkle with lemon juice. Toss well to break egg and coat leaves (this step can be omitted).
Garnish and serve.
